The Heart of Ramen: The Broth

The soul of any good bowl of ramen is the broth. In traditional Japanese ramen, broth is often simmered for hours. The base may vary, with tonkotsu (pork bone), shoyu (soy sauce), shio (salt), or miso broths being the most common.

We make our tonkotsu broth by slowly simmering pork bones, cartilage and other collagen-rich parts. This long, gentle cooking process extracts deep umami flavours from the bones while also creating a nutrient-rich broth. It is packed with collagen, minerals and natural gelatine that help promote joint health and support digestion.

Homemade Noodles: Freshness and Texture

What is ramen without perfect noodles? The texture of the noodles is just as important as the broth, and at TUNO, we make sure they are just right. We use a traditional Japanese method which gives ramen noodles that perfect chewy texture.

By making our noodles in-house, we ensure they are fresher and healthier, without any unnecessary additives. Fresh noodles also have a flavour and springiness that you just cannot get from anything pre-packaged. Each bite gives you that satisfying chew and pairs beautifully with the broth.

Real Ingredients: Nutrient-Rich and Unprocessed

Japanese ramen is often a well-balanced dish. The slow-cooked broth provides essential nutrients like collagen and amino acids, while the noodles offer carbohydrates for energy. Toppings like nori, soft-boiled eggs, bamboo shoots and chashu pork add proteins, fibres and essential vitamins.

Our broth is seasoned with traditional Japanese seasonings like soy sauce, miso and sea salt. We use only fresh vegetables, meats and spices to ensure every bowl is bursting with real flavours. This approach not only creates a richer flavour but also maintains the nutritional value of the ingredients.
